Carrot Hummus Not so Ho Hum

Carrot Hummus is simply delicious and nutritious. Carrots are known for their beta-carotene content, which your body converts into vitamin A that helps maintain the health of your eyes. One half cup of carrots provides 73% of your daily vitamin A needs.


Carrots also contain antioxidants to control free radicals in your body. Specifically two antioxidants: carotenoids in yellow and orange carrots and anthocyanins in red and purple carrots. Those antioxidants also help with heart health.


Other important nutrients in carrots include potassium to help lower blood pressure, calcium and vitamin K for strong bones, and vitamin C to boost your immune system and help your body absorb and use iron. Carrots are also full of fiber, which helps keep your digestion regular and regulates blood sugar.


* Steam carrots until soft then blend until smooth in a blender or food processor. * * Season with salt and pepper, grass-fed butter, cinnamon, or your favorite seasoning blend.

* Dip your favorite dippers and enjoy. We like sliced veggies such as cucumber, zucchini squash, sweet pepper, or even carrots. You can also try crackers or pita chips.
