Summer Sausage Bites

Ah, summer sausage. That salty, tangy taste brings back sunny memories. This type of sausage is cured and fermented and can be typically stored unopened without refrigeration for a long time. But it's not inherently bad for you in moderation.

We paired 1/2 - 1 inch slices of summer sausage with a dab of cream cheese and a dried apricot. Sweet, salty, smoky goodness in a bite-size tidbit. Quick and easy to make and oh, so tasty to eat!
